Spicy Thai (inspired)Quinoa Salad

Ingredients
  

  • INGREDIENTS:
  • 2 cups finely sliced red cabbage
  • 2 cups shredded carrots
  • 4 mini bell peppers finely sliced
  • 2 green onions chopped
  • 2 cup edamame
  • 2 cups cooked quinoa
  • 1 bunch cilantro chopped
  • DRESSING:
  • 4 tbsp peanut butter
  • 2 tbsp tamari
  • 2 tbsp rice wine vinegar
  • juice of 1 lime
  • 1 knob of fresh ginger grated or finely minced
  • 1 heaping tbsp homemade garlic paste
  • 1 tbsp sesame oil
  • 2 -3 tbsp sriracha
  • 1 cup hot water

Instructions
 

  • Add all of your vegetables and quinoa to a large bowl.Add all of the ingredients for the dressing to a bowl.  Start  by adding about a 1/4 cup of hot water to the bowl and start to whiskContinue adding water and whisking until the sauce lightens and gets creamy and smooth.  You want it a bit runny to pour over the salad but not too thin.  Alot will depend on your choice of peanut butter, some are thicker than others.Taste the sauce and add more sriracha to make it spicier!. Pour over the veggie/quinoa mixture and stir together.
